I have paid my loan officer for the inspection and appraisal he stated everything was set to go. still haven't closed.

why did you pay your loan officer ? you pay thru escrow for the inspection , or directly to the inspector, and the appraisal is paid thru a portal and not directly to the loan officer if /he/she/ they collected the funds, I would go to the branch manager.

More info needed.. Your loan officer should have given you a "Timeline" telling you what to expect.. having the appraisal inspection is just one step in about 100.. Typically, once the appraisal inspection is completed, the appraiser goes back to their office and can spend another week in completing the fully written appraisal. Once he done, he sends it to the lender and they can take a couple of days to review it for errors.. if it's error free, then depending on what other loan conditions were needed, it could take a few more weeks to get loan doc's.. try contacting your loan officer and ask him where you are in the process.. ask for a timeline..
