for our mortgage loan, the underwriter wants a LOE for me being a stay at home mom. How do I structure that?

I would keep it simple and to the point. "I am a stay at home mother with x numbers of kids, I have been raising my kids for an x number of years." You can add a little more as to the reason you feel its best to stay at home. Side note, why is the underwriter needing a LOE for that...?
