It is not a problem at all. You can simply submit your offer letter from the new employer. Some lenders/underwriters may want to see a pay stub (showing full-time) prior to closing. You can certainly be approved with only the letter though.

You should be ok. What are your credit scores now?

Multi-unit investment
It may be difficult to find a lender for that loan size. It has been my experience that when it comes to apartments, it's easier get a $1,000,000 loan than for $100,000. That said, apartment loans are typically for shorter terms. You might even want a 10 year loan.
