How long do I have after escrow opens to apply for a loan.

I am going to be a first time home buyer. How long after escrow opens can I apply for my loan. I am out of my town the whole first week after it opens due to business. All parties have agreed to a forty day escrow, but I'm not sure if I can wait a week without starting the loan process. We're still shopping for rates.
